Ingredients
½ cup Bourbon
½ cup packed light brown sugar
1/3 cup soy sauce
2 Tbsp Worcestershire sauce
½ tsp Tabasco sauce
1 Tbsp Dijon mustard
1 tsp cornstarch
3 lbs skirt steak
Preparation
Combine bourbon, brown sugar, soy sauce, Worcestershire, Tabasco, mustard, and cornstarch and stir until sugar has dissolved. Put in a plastic bag and marinate steak for 1-2 hours or to your liking.
Preheat a cast-iron grill pan to medium high heat. Remove from marinade, pat dry and place on grill pan. Cook, turning once, 3-5 minutes per side for medium rare.
Transfer steak to a cutting board, cover loosely with foil and let rest 5 minutes. Cut steak into thin slices and serve on a warmed platter.
Serve with baked beans.
