Balsamic Steak Rolls
Ingredients
1 lb. flank steak
Salt and pepper
4 Tbsp extra virgin olive oil
1 Tbsp balsamic vinegar
½ tsp fresh thyme leaves
¼ tsp Italian seasoning
1 small red bell pepper sliced into thin strips
1 small orange bell pepper sliced into thin strips
1 medium zucchini sliced into thin slices

Preparation
Slice the steak into 2-inch-wide strips. Cut each strip in half (you should have 8 pieces of steak). Place the steak between two sheets of wax paper, use a meat hammer to tenderize each piece into thin sheets. Season with salt and pepper.Â
In a large bowl, combine 2 Tbsp olive oil, balsamic vinegar, thyme, Italian dressing, and ¼ tsp salt.
Heat 1 Tbsp olive oil in a skillet over medium heat, sauté veggies until just tender (about 5 minutes). Season with salt and pepper; toss hot veggies in balsamic mixture.
Place a few strips of veggies on one end of steak and roll up. Secure with a toothpick. Repeat with other steak and veggies.
Heat cast iron skillet over medium high heat, add oil. Before it begins to smoke, place steak rolls into pan and sear 1-2 minutes on each side. Remove and let steaks rest about 5 minutes before serving. Drizzle some glaze over the roll ups before serving, if desired.
