Easy Oven Baked Tri Tip Roast

Ingredients
1 ½ - 2 ½ lb. Tri Tip Roast
1 ½ Tbsp coffee grounds
1 tsp sea salt
½ tsp black pepper
1 tsp garlic powder
1 tsp chipotle
1 tsp cumin
Preparation
Mix together the coffee, sea salt, pepper, garlic powder, chipotle, and cumin in a bowl. Rub the room temperature tri tip roast with the spice mixture while the oven is preheating at 350° F.
Heat a cast iron pan on the stove on medium high heat and add a few tablespoons of olive or avocado oil. Once the pan is hot, sear the roast about 4 minutes on each side.
Remove the pan from the stove and place it into the oven. Cook until medium rare which is an internal temperature of 135° F. (usually about 15-17 minutes, use a thermometer to test for doneness)
Once it is done, remove it from the oven and pan, tent with foil and allow it to rest about 5 minutes before slicing.

It is best when cooked a little more rare, meaning it is still pink inside. Keep in mind that the thinner end pieces will cook quicker and be more done, and the thicker middle will be less done. If you start slicing and realize that the center is not 135° F, slice the ends off and pop the center back into the oven.Â
