Southern Oxtail

Ingredients

  • 3-4 lbs. oxtails                                                                                    

  • ¾ cups all-purpose flour

  • 4 Tbsp vegetable or olive oil

  • 3 cups beef stock or beef broth

  • ½ sweet onion sliced

  • 6 cloves garlic minced

  • 1 green bell pepper [optional]

  • Cooked rice for serving

 

Oxtail Seasoning

  • 2 Tbsp Kosher salt

  • 1 ½ Tbsp ground black pepper

  • 1 Tbsp seasoned salt

  • 1 ½ tsp granulated garlic

  • 1 ½ granulated onion

  • 1 tsp lemon pepper

  • 1 tsp white pepper

  • 1 tsp Italian seasoning

  • 1 tsp Goya Sazon

Preparation

Oxtail Seasoning:

  1. Make oxtail seasoning : combine all seasoning ingredients in a small bowl. Stir together until well combined.


Oxtails:

  1. Season oxtails with 2 Tbsp seasoning mixture.


  2. Sprinkle ¼ cup of flour over oxtails, shake off excess flour.


  1. Heat 4 Tbsp oil in a heavy –duty roaster or Dutch oven over medium heat. Once hot, add seasoned oxtails and sear on all sides until brown. Remove from pan and set aside.


  1. Leave oil in pan and whisk ½ cup of flour. Pour beef stock and add 1 Tbsp of oxtail seasoning.  Keep whisking until gravy is smooth and takes on a golden brown color.


  1. Lower heat to medium and add onion, garlic, and bell pepper.


  2. Return seared oxtails back into pot and stir gently.


  1. Cover pot and place in preheated 325˚ oven. Cook for 2 hours 45 minutes to 3 hours. Oxtails should be 180-200˚
