Ingredients
1 lamb liver - 4 oz. for this recipe
½ red onion
 Sprigs of fresh sage
1 slice of sourdough bread
1 slice of smokey streaky bacon
2 tsp olive oil or more
Drizzle of red wine vinegar
Salt and pepper to taste
Preparation
Peel onion, slice finely.Â
Heat 1 tsp oil over medium high heat, add onion and sliced sage leaves. Cook for 5Â minutes. Save 2 sage leaves.
Push the mixture to the side and add the bacon and bread. Once the bacon is crisp and the bread browned flip over to other side. Drizzle the onions with the vinegar, toss. Put them on the bread, also the bacon.
 Lightly season the liver with salt and pepper. Sear the liver for 1 minute on each side until golden brown on the outside and pink in the middle.
Crisp the 2 sage leaves in 1 tsp oil and put on the open face sandwich. Serve immediately.
NOTES:
Liver cooked too long will be tough. Crisp bacon gives an added texture to the dish.
Recipe would need to be increased to use a pound of liver.
