Jamie Oliver Lamb Heart

Ingredients

  • 1 lamb heart cut into 3 equal pieces

  • 2 Tblsp olive oil

  • 2 garlic cloves chopped 

  • Zest and juice of ½ lemon

  • ½ tsp salt (extra sea salt for garnish)

  • ½ tsp coarsely ground black pepper

Preparation

Marinade: 

  • Combine olive oil, chopped garlic lemon zest and juice, thyme leaves, salt, and pepper in a bowl. Add the heart pieces to the bowl and coat each piece.  Cover the bowl and refrigerate for 2 hours or ideally overnight for best flavor.


  1. After marinating, remove the lamb heart from the fridge and shake off excess marinade and remove bits of garlic and zest.


  2. Heat a pan over high heat.  Add the heart pieces and sear for 1 minute on each side until browned and caramelized.


  3. After searing let it rest


  4. Heat a pan over high heat.  Add the heart pieces and sear for 1 minute on each side until browned and caramelized.


  5. After searing let it rest 3-5 minutes to allow the juices to redistribute, making the meat more tender and flavorful. Next slice the lamb heart thinly. Sprinkle with flaky sea salt before serving.


NOTES:

  • Lamb heart has a strong tasty flavor. It has lots of iron and protein.
