Jamie Oliver Lamb Heart
Ingredients
1 lamb heart cut into 3 equal pieces
2 Tblsp olive oil
2 garlic cloves choppedÂ
Zest and juice of ½ lemon
½ tsp salt (extra sea salt for garnish)
½ tsp coarsely ground black pepper
Preparation
Marinade:Â
Combine olive oil, chopped garlic lemon zest and juice, thyme leaves, salt, and pepper in a bowl. Add the heart pieces to the bowl and coat each piece. Cover the bowl and refrigerate for 2 hours or ideally overnight for best flavor.
After marinating, remove the lamb heart from the fridge and shake off excess marinade and remove bits of garlic and zest.
Heat a pan over high heat. Add the heart pieces and sear for 1 minute on each side until browned and caramelized.
After searing let it rest

After searing let it rest 3-5 minutes to allow the juices to redistribute, making the meat more tender and flavorful. Next slice the lamb heart thinly. Sprinkle with flaky sea salt before serving.
NOTES:
Lamb heart has a strong tasty flavor. It has lots of iron and protein.
