

Nigella Lamb Kofta

Ingredients
1lb. ground lamb                                                                           Â
1 small onion finely chopped                     Â
2 cloves garlic minced  Â
¼ c fresh parsley chopped
1 tsp cumin                       Â
1 tsp ground coriander
¼ tsp black pepper
Preparation
In a bowl, combine lamb, onion, garlic, parsley, cumin, coriander, salt and pepper. Mix well. Use your hands to thoroughly combined.
Divide the mixture into equal portions and shape each into a long oval patty and place skewer through the center from end to end.
Preheat grill or skillet over medium high heat. If grilling, lightly oil the grates. Cook the kofta for about 4-5 minutes on each side or until nicely browned and cooked through.
Serve hot with pita bread, yogurt sauce, or a side salad.
NOTES:
Refrigerate lamb mixture about 30 minutes before shaping. This helps patties hold their shape better. Make sure they are even size for even cooking. Slightly oil your hand when shaping to prevent meat from sticking to your hand. Let lamb rest after cooking so juices will redistribute.

Plain yogurt, squeeze of lemon, pinch of salt and pepper.
